This recipe is a go-to side dish for me, it’s just so delicious. It obviously contains a lot of starch and some sugar, so it might not be something you want to have every day, but it’s a must once in a while! Enjoy.
- 1.5 pounds organic sweet potatoes
- 1 ripe banana
- ¾-1 can of full fat, organic coconut milk
- 2 Tbsp. agave syrup
- 2 tsp cinnamon
- 1 tsp vanilla
Preheat oven to 325 °C. Bring a large pot of water to a boil. Peel the sweet potatoes, place in the pot and boil until tender (about 15-20 minutes). Drain and mash the potatoes. Once mashed, peel the banana and mash it into the potatoes. Add the other ingredients, stir well and then do a taste test and add more of any of them, depending on how sweet or how cinnamon-y etc you want it. Pour into a 9×13 baking dish and sprinkle a little cinnamon on top. Bake for 20 to 25 minutes, serve and enjoy!
