Breakfast Smoothie

photoThis is how we start our day in my family. Even the wee ginger baby likes it. Many smoothie or even green smoothie recipes are loaded with fruit and fruit juice, which although nutrient rich, are also high in sugar and glycemic load. This offers a nutrient dense, lower glycemic option that still tastes good. Depending on how much and what type of veggies you put in, it can take a little getting used to, but it is an amazingly nutritious way to start the day and this recipe makes enough for you to take extra along on your day.

Ingredients

  • 1 Avocado — adds some healthy fat and some extra calories to keep you going and gives a rich, creamy texture.
  • 1 Lemon or lime
  • Leafy green veggies. Kale, sprouts, spinach, mixed greens etc. We use 1 large box of spinach or mixed greens (312 gram at the grocery store) or the equivalent in Kale, sprouts or other green leafy veggies. If you are just starting out, spinach is probably the mildest green and will leave the least veggie taste.
  • 1 cup of dark frozen berries (We like the organic power berries from superstore (blueberries, blackberries and dark cherries)) – very nutrient dense and lower sugar fruit.
  • Water
  • (Optional) we will add some fresh ginger, a frozen banana instead of berries, and substitute coconut milk or oil for the avocado, or add a few scoops of an organic raw food powder (We use Pranin A-Z).

We try to use all organic ingredients and filtered water whenever possible.

Instructions

Scoop out the insides of the avocado and place in a blender. Add a whole lemon or lime (quartered, seeds removed). Next, put in one large box (312grams) of spinach greens or other leafy green veggies. Add approximately 1 cup of dark frozen berries (blueberries, blackberries, dark cherries, or a combination). Fill blender with water to about 2/3rds the way up. Blend and enjoy!

This recipe basically fills up our Vitamix and makes about 8 cups. If you have a smaller blender, you can adjust accordingly.
